boiling octopus-lobster stock - make sure to heat lobster stock on low, fridge overnight and reheat the next day. octopus must be well boiled and then bake with potatoes for about 20 minutes.
lemons for paella - in my opinion, the two most important ingredients for a paella are lemons and saffron...
aioli before firm - aioli is impossible for me to make, but i keep on trying. slowly add the oil to the salt, pepper and garlic. i like adding egg yolks..

lobster stock - save all fish and lobster bodies in the freezer! you never know when you may need to make a paella.
